Spinach & Sundried Tomato Frittata

Made this as a hardy Winter breakfast, but it tastes like Summer.



I thought I'd be clever and add the recipe to the picture, but if the print is too small here it is:

Eight Eggs Beaten w/ 2 Tbs Milk, Salt & Pepper (Set Aside)

5 Cups Raw Spinach Cooked down in 2 Tbs Olive Oil, Salt & Pepper

Add 1/4 Cup Sliced Sun-dried Tomatoes (forgot to add Sliced in the original recipe).

Add Eggs

Cook on Stovetop for a few minutes, then place in 300 deg. oven until done.
Finish with Grated Romano Cheese.

It probably wouldn't hurt, most likely even help, to add some bacon or prosciutto.

Different Eggs

Eggs.  and bacon or sausage.  with biscuits or toast (what kinda bread are you using?  Not to mention cut of bacon or type of sausage).  But I digress, as commentators so often do these days and am going to switch it up a little.
You may be familiar with this:
Chorizo and eggs- yummy and easy- cook chorizo and add eggs.  Different variations: diced potatoes and onions (brown potatoes first with onions then add chorizo and then eggs) top with cheese.

But even simpler still:
Seasoned eggs
Start eggs in hot olive oil
Add:  salt pepper paprika italian seasoning onion powder
don't flip! place aluminum foil or lid over skillet and let cook for 3 min(or until desired runnyness or not) and  finito

Or my version of scrambled eggs:
4 eggs
1Tbs Milk or Cream even
salt pepper
dash of onion powder
1ts dried parsley mixed ( or fresh parsley at the end)
 and cooked in skillet with 2 ts butter.

Bananas at Breakfast


It was a hit last weekend because it was oh, so good.  Great as a late breakfast, This French Toast is worth monkeying around in the kitchen for.  Kids can help slicing bananas, measuring, and mixing allowing for a fun time for all.

Enough for 4 Plates

Italian Loaf 1/2in Slices


Banana Topping (Start Before Toast so the Goodness can begin)
3 Bananas (Just Getting Ripe) Sliced, not too thin about 1/4 inch
Half-Stick Butter
1/4 Cup Brown Sugar
-Melt Butter in pan
-Add Bananas and Brown Sugar over LOW heat and stir occasionally.  *If it gets too hot the sugar will burn =  No Good.

Toast Batter
4 Eggs
1/2 Cup Milk
1/4 Cup Whipping/Heavy Cream
1 ts Vanilla
Dash of Salt
-Mix all Together


Whipped Cream
I enjoy making homemade whipped cream so I can add my on flavor.
For this recipe 1/2 ts of Almond Extract was added with 4 ts. Granulated Sugar to 3/4 Cup Whipping Cream.  It is tiring, so if you have a stand mixer I recommend you use that.

Toast in skillet or on griddle with butter, Add Banana goodness, Top with Slivered Almonds and Wha-La!
